Ingredients
  

  • 3-4 very ripe medium-sized bananas (about 1 ½ cups mashed)
  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • ¼ cup brown sugar, packed
  • 2 large eggs, at room temperature
  • ½ cup unsalted butter, melted and cooled
  • ¼ cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamo
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • Optional: ½ cup chopped walnuts or pecans, ½ cup shredded coconut, or ¼ cup dark rum

Method
 

  1. Preheat your oven to 350°F (175°C) and prepare a 9x5 inch loaf pan by greasing it.
  2. In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking soda, cinnamon, nutmeg, and salt.
  3. In a medium mixing bowl, mash the ripe bananas until mostly smooth.
  4. Mix the mashed bananas with melted butter, eggs, milk, and vanilla until combined.
  5. Pour the wet ingredients into the dry ingredients and fold gently until just combined.
  6. Transfer the batter to the prepared loaf pan and bake for 55-65 minutes or until a toothpick inserted comes out clean.
  7. Cool in the pan for 10-15 minutes, then remove and cool completely on a wire rack.

Notes

Use very ripe bananas for the best flavor. Don't overmix the batter to ensure a moist texture. You can add toppings like demerara sugar before baking for an extra crunch.
