  • 1 cup warm milk (105-115°F)
  • 2 ¼ teaspoons active dry yeast
  • ¼ cup granulated sugar, plus a pinch for yeast
  • 1 large egg, room temperature
  • 2 tablespoons unsalted butter, melted
  • 3 cups all-purpose flour, plus more for dusting
  • ½ teaspoon salt
  • Vegetable oil, for frying
  • 2 cups powdered sugar, sifted
  • ½ cup unsweetened cocoa powder, sifted
  • ¼ cup milk or heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Method
 

  1. Activate the yeast by combining warm milk, a pinch of sugar, and yeast and letting it sit until foamy.
  2. Prepare the dough by adding remaining sugar, egg, and butter to the yeast mixture, then gradually mixing flour and salt.
  3. Knead the dough until smooth and elastic, then let it rise in a greased bowl until doubled in size.
  4. Roll out the dough and cut donuts, letting them rise again until puffy.
  5. Heat the oil to 350-360°F, fry the donuts until golden brown and drain on a wire rack.
  6. Prepare the glaze by mixing powdered sugar, cocoa powder, milk, vanilla, and salt until smooth.
  7. Dip warm donuts in glaze, let the excess drip off, and allow glaze to set before serving.

Notes

Store cooled donuts in an airtight container for up to 2 days. For longer storage, refrigerate for up to 4 days. To freeze, do so before glazing.
