Ingredients

Tortilla Dough
  • 2.5 cups bread flour
  • 0.5 tsp baking powder
  • 0.5 tsp kosher salt
  • 0.33 cup salted butter softened to room temperature
  • 0.75-1 cup hot water start low and add more if needed
Classic Beef Filling
  • 1 pound ground beef
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • to taste salt and pepper
  • 0.5 cup salsa
  • 0.5 cup shredded cheddar cheese

Method

  1. In a large bowl, combine bread flour, baking powder, and salt. Mix well.
  2. Add softened butter and cut it into the dry ingredients until it resembles coarse sand.
  3. Pour in ¾ cup of hot water and mix. Add more water if needed to form a soft, slightly tacky dough ball.
  4. Knead the dough on a floured surface for 5 minutes until smooth and elastic.
  5. Divide the dough into 5–10 portions, shape into discs, and let rest covered for 30 minutes.
  6. Roll each disc on a floured surface into a 12–14 inch circle. Keep unused discs covered.
  7. Cook each tortilla in a preheated pan for about 30 seconds per side until golden spots appear. Stack in a towel to keep warm.
  8. For the beef filling, cook ground beef in a skillet over medium heat until browned. Drain fat.
  9. Add chopped onion and garlic. Cook until soft and fragrant.
  10. Stir in cumin, chili powder, salt, and pepper. Mix thoroughly.
  11. Add salsa and simmer for 5 minutes. Remove from heat and stir in shredded cheese.
  12. Cool filling before using in tortillas to avoid sogginess.
  13. To assemble, place filling below the center of a warm tortilla, fold sides in, roll tightly, and optionally toast the seam side for a secure seal.

Notes

Always let your tortilla dough rest before rolling. It makes shaping easier and improves texture. To freeze, wrap assembled burritos in foil and store in a freezer-safe bag. Reheat in a 350°F oven until hot.
