Ingredients

  • 2 cups fresh mixed berries (strawberries, raspberries, blueberries, blackberries)
  • 3 tablespoons unflavored gelatin powder
  • 1 ½ cups filtered water, divided
  • ¼ cup natural sweetener (erythritol, stevia blend, or monk fruit sweetener)
  • 1 tablespoon lemon juice
  • ¼ teaspoon pinch of salt

Method

  1. Wash and hull the fresh berries. Lightly mash them with a fork in a medium mixing bowl.
  2. Sprinkle the unflavored gelatin powder over ½ cup of cold filtered water in a small saucepan and let sit for 5-10 minutes to bloom.
  3. Over low heat, whisk the bloomed gelatin constantly until fully dissolved, then remove from heat.
  4. Add the remaining 1 cup of water, mashed berries, sweetener, lemon juice, and salt to the dissolved gelatin mixture. Whisk to combine well.
  5. Pour the mixture into an 8x8 inch baking dish and chill in the refrigerator for 4-6 hours or overnight until set.
  6. Once set, cut into squares using a knife dipped in hot water for clean edges.

Notes

Ensure to bloom the gelatin properly to avoid lumps. Use ripe berries for the best flavor.
