  • 1 bag frozen diced potatoes 32-ounce
  • 4 cups chicken broth
  • 1 can cream of chicken soup 10.5-ounce
  • 8 ounces cream cheese softened and cubed

  • 1 cup half and half
  • green onion chopped for garnish

Equipment

  • 6-quart slow cooker

Method

Preparation
  1. Combine frozen diced potatoes, chicken broth, cream of chicken soup, softened cream cheese, ranch dressing mix, pepper, onion powder, and 1 cup of bacon in a 6-quart slow cooker.
  2. Cover the slow cooker and cook the mixture on LOW for 5-6 hours or on HIGH for 2-3 hours.
  3. About 15 minutes before serving, stir the soup to blend the cream cheese, then add 1 cup of half and half and 2 cups of shredded sharp cheddar cheese; cover and warm until the cheese melts.
  4. Garnish the finished soup with chopped green onion, extra shredded cheddar cheese, and the remaining ¼ cup of bacon pieces, if desired.

Notes

Ensure cream cheese is softened and cubed for easier incorporation. Stir the soup well before adding the half and half and cheddar cheese. Garnish with chopped green onion, extra shredded cheddar cheese, and the remaining bacon pieces as desired.
