  1. In a small saucepan over medium-low heat, whisk together the milk, pumpkin puree, maple syrup, pumpkin pie spice, and vanilla until hot and steaming, but not boiling.
  2. Use a whisk, milk frother, or immersion blender to blend the mixture until smooth and slightly frothy.
  3. Pour the coffee or espresso into a mug.
  4. Add the heated pumpkin milk mixture to the mug and stir well to combine.
  5. Top with a little extra milk foam or whipped cream, if using, and dust with a pinch of pumpkin pie spice.
  6. Serve immediately and enjoy.

Notes

For a sweeter latte, add more maple syrup or honey to taste. Any milk works well here, and you can use coffee or espresso depending on how strong you like it. For a dairy-free topping, use whipped coconut cream.
