Method
 

  1. In a large mixing bowl, combine the rolled oats, ground flaxseed, chopped pecans, chia seeds, pumpkin pie spice, cinnamon, and salt.
  2. Add the pumpkin puree, almond butter, maple syrup, and vanilla extract. Stir until the mixture is evenly combined and holds together when pressed.
  3. If the mixture seems too wet, add a little more oats. If it seems too dry, add 1 to 2 teaspoons of pumpkin puree or almond butter until it is easy to roll.
  4. Cover and refrigerate the mixture for 15 to 20 minutes to help it firm up.
  5. Scoop out about 1 tablespoon of mixture at a time and roll into bite-sized balls with your hands.
  6. If desired, roll the balls in shredded coconut to coat.
  7. Place the energy balls on a plate or baking sheet and chill for another 10 minutes before serving.
  8. Store leftovers in an airtight container in the refrigerator.

Notes

For best texture, chill the mixture before rolling. If the dough is sticky, lightly wet your hands or add a bit more oats; if it is crumbly, add a small amount of pumpkin puree or almond butter. Store in the refrigerator for up to 1 week.
