Healthy Bariatric Jello Fluff Recipe

Ingredients
  

  • 1 small box (0.3 oz) sugar-free gelati
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 cup plain Greek yogurt (0% or 2% fat)
  • 1 scoop whey protein isolate (unflavored or vanilla)
  • 1 cup sugar-free whipped topping (thawed)
  • 1/2 cup fresh fruit (optional, finely diced)
  • Sweetener to taste (optional)

Method
 

  1. In a medium mixing bowl, combine the sugar-free gelatin powder with 1 cup of boiling water and whisk until completely dissolved.
  2. Add 1/2 cup cold water to the gelatin mixture and stir well. Chill the mixture in the refrigerator for 15-20 minutes until it thickens slightly.
  3. While the gelatin is chilling, combine the plain Greek yogurt and the scoop of whey protein isolate in a separate bowl. Whisk until smooth.
  4. Remove the gelatin mixture from the refrigerator and whip it on high speed for 5-7 minutes until frothy and almost doubled in volume.
  5. Gently fold the yogurt and protein mixture into the whipped gelatin until well combined.
  6. Fold in the thawed whipped topping and optional diced fruit. Spoon the mixture into serving bowls or glasses.
  7. Refrigerate for at least 2-4 hours or overnight to set completely.
  8. Serve chilled, garnished with fresh berries or mint if desired.

Notes

This recipe can be made ahead of time and stored in airtight containers in the refrigerator for up to 3-4 days.
