Gut Healing Ginger Honey Jello

Method
 

  1. In a small saucepan, heat 2 cups of filtered water and sliced ginger over medium heat until it begins to simmer.
  2. Reduce the heat and let the ginger steep for 5-7 minutes to infuse the water with its flavor.
  3. Strain the ginger water into a mixing bowl, discarding the ginger slices.
  4. Stir in the raw honey while the water is still warm until fully dissolved.
  5. In a separate small bowl, sprinkle the gelatin powder evenly over 1/4 cup of cold filtered water and let it bloom for 5 minutes.
  6. Once the gelatin has bloomed, slowly whisk it into the warm ginger-honey mixture until fully dissolved and smooth.
  7. Pour the mixture into a glass or silicone mold and refrigerate for at least 2-3 hours, or until fully set.
  8. Once firm, gently remove the jello from the mold and serve chilled.

Notes

You can adjust the sweetness by adding more or less honey. For extra flavor, try adding a pinch of cinnamon or turmeric.
