Equipment

  • Small saucepan
  • Strainer
  • Mixing bowl
  • Refrigerator
  • serving molds

Method

  1. In a small saucepan, bring 2 cups of water to a gentle simmer over medium heat.
  2. Remove from heat and add the green tea leaves (or tea bags). Let steep for 3-5 minutes, depending on desired strength.
  3. Strain the tea to remove the leaves (or discard the tea bags) and return the tea to the saucepan.
  4. Add sugar to the tea, stirring until fully dissolved. Adjust sweetness to taste or omit if preferred.
  5. In a small bowl, sprinkle the gelatine powder over 1/4 cup cold water and let bloom for 5 minutes.
  6. Gently heat the strained tea again over low heat, then stir in the bloomed gelatine until completely dissolved.
  7. Pour the mixture into individual serving molds or a single large dish. Let cool slightly before transferring to the refrigerator.
  8. Refrigerate for 2-3 hours or until fully set.
  9. Once set, gently unmold or slice the gelatine into portions. Serve chilled.

Notes

You can adjust the sweetness by adding more or less sugar, or omit it entirely for a sugar-free version.
