Ingredients

Flavor Base
  • 2 tbsp olive oil for sautéing
  • 1 onion diced
  • 3 cloves garlic minced
Protein
  • 0.5 lb ground beef lean
  • 0.5 lb Italian sausage use turkey or chicken sausage if avoiding pork
Sauce
  • 1 can diced tomatoes with juices 14.5 oz can
  • 2.5 cups marinara sauce e.g. Rao’s Homemade
  • 3.5 cups chicken broth
  • 1 tbsp Italian seasoning
  • 1 tsp sea salt to taste
Noodles
  • 1 box gluten-free lasagna noodles e.g. Jovial Foods, Natural Heaven Hearts of Palm
For Serving
  • 1 cup Kite Hill ricotta cheese dairy-free optional
  • 2 tbsp chopped fresh parsley for garnish

Method

  1. In a large pot, heat olive oil over medium-high heat. Add diced onion, minced garlic, ground beef, and Italian sausage. Cook for 5–7 minutes, stirring often, until meat is mostly browned and onions have softened. Drain excess fat.
  2. Add diced tomatoes, marinara sauce, chicken broth, Italian seasoning, and salt. Stir well and bring to a boil. Reduce heat to medium-low, cover, and let simmer while you prepare the noodles.
  3. In a separate pot, bring water to a boil. Add gluten-free lasagna noodles and cook for 5–6 minutes until just al dente. Drain and cut noodles into bite-sized pieces.
  4. Add cooked noodles to the soup. Simmer together for another 5–10 minutes, stirring occasionally, until noodles are tender but not mushy.
  5. Ladle soup into bowls. Top with a scoop of dairy-free ricotta and a sprinkle of chopped parsley. Serve hot and enjoy.

Notes

To prevent mushy noodles, cook them separately and add just before serving. Freeze soup without noodles for best texture. For a vegan version, use plant-based meat alternatives and vegetable broth.
