Ingredients
  

  • 2 cups filtered water
  • 1/4 cup unflavored gelatin powder
  • 1 cup fresh or frozen mixed berries
  • Erythritol or stevia to taste
  • 1 tablespoon lemon juice (optional)

Method
 

  1. Bloom the gelatin by sprinkling it over 1/2 cup of cold water and letting it sit for 5-10 minutes.
  2. In a medium saucepan, bring 1.5 cups of water to a gentle simmer.
  3. Remove the saucepan from heat and stir in the sweetener until dissolved.
  4. Add the bloomed gelatin to the hot liquid, whisking continuously until clear.
  5. Gently fold in the mixed berries and lemon juice, if using.
  6. Pour the mixture into an 8x8 inch dish or individual molds and refrigerate for 4-6 hours or until set.

Notes

Ensure to chill overnight for best results. Store in an airtight container and enjoy within 5-7 days.
