Fruit Gelatin Recipe

Ingredients
  

  • 4 packets (1 oz total) unflavored gelati
  • 2 cups cold water, divided
  • 2 cups boiling water
  • 4 cups 100% unsweetened fruit juice (e.g., apple or white grape)
  • 2 cups fresh or frozen mixed berries
  • 1 cup halved fresh seedless grapes
  • 2-4 tbsp optional sweetener (erythritol or stevia blend)

Method
 

  1. Bloom gelatin by sprinkling 4 packets over 1 cup cold water in a bowl. Let sit for 5-10 minutes.
  2. Boil 2 cups of water. Pour over bloomed gelatin and whisk for 2-3 minutes until fully dissolved.
  3. Stir in 4 cups of unsweetened fruit juice and 1 cup of cold water, adding optional sweetener if desired.
  4. Wash and prepare fresh fruit. Thaw and drain frozen fruit. Arrange evenly in a dish or molds.
  5. Pour the gelatin liquid over the fruit. For floating fruit, chill for 20-30 minutes until thickened slightly and stir the fruit in before pouring.
  6. Refrigerate for 4-6 hours, or overnight, until firm. Cut into squares or unmold and serve chilled.

Notes

Ensure adequate blooming and dissolving of gelatin for best results. Avoid enzyme-rich fruits unless cooked to prevent gelatin from setting. Store in an airtight container in the refrigerator and consume within 5-7 days.
