Ingredients
  

  • 2 tablespoons unflavored gelatin powder
  • 1 can fruit cocktail packed in 100% fruit juice
  • ½ cup water (cold)
  • 1½ cups reserved fruit juice (from the canned fruit)
  • Sweetener of choice (erythritol, stevia, or maple syrup)
  • Citrus zest (optional, lemon or lime)
  • Collagen peptides (optional)

Method
 

  1. Prepare your fruit by draining the canned fruit cocktail, reserving the juice.
  2. Bloom the gelatin by sprinkling it over cold water and letting it sit for 5-10 minutes.
  3. Heat the reserved fruit juice and sweetener until the gelatin is dissolved, stirring constantly.
  4. Cool the mixture slightly before folding in the fruit cocktail.
  5. Pour the mixture into molds and refrigerate until set, approximately 4-6 hours.
  6. Serve chilled and enjoy.

Notes

A great way to add protein to your dessert. Adjust sweetness and use fresh fruits as desired.
