  1. In a large mixing bowl, combine the rolled oats, ground flaxseed, chopped nuts, and unsweetened shredded coconut (if using). Stir to mix well.
  2. Add the peanut butter, honey (or maple syrup), vanilla extract, and a pinch of salt to the dry ingredients. Mix thoroughly until the mixture comes together into a sticky dough.
  3. Fold in the mini chocolate chips (if using) to evenly distribute them throughout the mixture.
  4. Using clean hands or a small cookie scoop, roll the mixture into bite-sized balls, approximately 1 inch in diameter.
  5. Place the energy balls on a parchment-lined tray or plate in a single layer.
  6. Refrigerate the energy balls for at least 20 minutes to firm up before serving.
  7. Store the energy balls in an airtight container in the refrigerator for up to 1 week or freeze them for longer storage.

Notes

Feel free to customize the recipe by adding your favorite mix-ins like dried fruit or seeds. Adjust the sweetness by using more or less honey or maple syrup.
