Ingredients
  

Cheese Ball Base
  • 16 ounces cream cheese room temperature
  • 4 ounces green chilies drained
  • 3 tablespoons taco seasoning or a one ounce packet
  • 1 cup shredded cheese both cheddar and Colby Jack work great in this
  • 1/2 cup frozen corn
Coating
  • 1/2 cup crushed Doritos

  • Plastic wrap
  • Refrigerator

Method
 

Preparation
  1. In a large bowl, combine the cream cheese, green chilies, taco seasoning, shredded cheese, and frozen corn.
  2. Place a large piece of plastic wrap on a surface and transfer the mixture onto it.
Form and Chill
  1. Use the plastic wrap to form the mixture into a compact ball. Refrigerate the cheese ball for at least 8 hours or, ideally, overnight.
Serve
  1. Remove the cheese ball from the refrigerator, unwrap it, and coat its exterior evenly with crushed Doritos.
  2. Serve the finished taco cheese ball with your favorite crackers and tortilla chips.

Notes

For best results, ensure the cream cheese is at room temperature for easier mixing. You can prepare this cheese ball a day in advance to allow flavors to meld and for proper chilling. Get creative with your dippers beyond crackers and tortilla chips, such as sliced bell peppers or cucumber rounds.
