  • 1/4 cup finely chopped fresh parsley
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 medium red bell pepper, finely diced
  • 1 medium green bell pepper, finely diced
  • 1 cup fresh spinach, roughly chopped
  • 1/2 cup crumbled feta cheese
  • Optional: 1/4 cup cooked diced chicken sausage or turkey bacon bits
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 large orange, peeled and segmented
  • 1/2 large grapefruit, peeled and segmented
  • 2 tablespoons fresh mint leaves, finely chopped
  • 1 tablespoon fresh lime juice
  • 1 teaspoon raw honey or maple syrup (optional)

Method

  1. Preheat your oven to 375°F (190°C). Line a 9x13 inch baking sheet with parchment paper.
  2. In a small pan, heat the olive oil over medium heat. Add the diced bell peppers and sauté for 3-5 minutes.
  3. In a large mixing bowl, whisk together the eggs, almond milk, parsley, Italian seasoning, salt, and black pepper until well combined.
  4. Carefully pour the egg mixture onto the prepared baking sheet. Scatter the sautéed bell peppers, chopped spinach, and feta cheese over the top.
  5. Bake for 20-25 minutes, or until the eggs are set and slightly golden brown.
  6. Let it cool for 5-10 minutes, then cut into desired serving squares.
  7. In a large serving bowl, combine the strawberries, blueberries, raspberries, orange segments, and grapefruit segments.
  8. Add the finely chopped mint leaves and lime juice to the fruit salad, and drizzle with honey or maple syrup if desired. Gently toss to combine.
