  • 4 chicken breasts cooked and chopped
  • 2 packages frozen chopped spinach thawed and excess water squeezed out
  • 1 cup mayonnaise
  • 2 cans condensed cream of chicken soup
  • 1 tablespoon lemon juice
  • 1/2 teaspoon pepper
  • 1 cup shredded sharp cheddar cheese
  • 3/4 cup coarsely crushed Ritz crackers

Preparation
  1. Lightly grease a 7x11 or 9x13-inch casserole dish and preheat the oven to 350 degrees F.
  2. In a large bowl, combine the cooked chicken, spinach, mayonnaise, cream of chicken soup, lemon juice, and pepper, then stir until well mixed.
  3. Spread the prepared mixture evenly into the greased casserole dish.
  4. Sprinkle the shredded cheese and crushed Ritz crackers over the top, then bake for 25 to 30 minutes.

Notes

Ensure to squeeze out as much water as possible from the thawed spinach to prevent a watery casserole.
