Method
 

  1. Pour the unsweetened cranberry juice into a small saucepan and heat over medium-low heat until warm but not boiling.
  2. Sprinkle the gelatin powder evenly over the warm cranberry juice and let it sit for 1-2 minutes to bloom.
  3. Stir the gelatin and cranberry juice mixture gently until the gelatin is fully dissolved.
  4. Remove the saucepan from heat and stir in the honey (or sweetener of choice) until fully combined.
  5. Pour the mixture into a shallow dish or silicone molds and let it cool to room temperature.
  6. Transfer to the refrigerator and chill for at least 2 hours, or until the gelatin is fully set.
  7. Remove the gelatin from the molds or cut into squares if using a dish, and serve chilled.

Notes

You can substitute honey with maple syrup or agave nectar for a different flavor. Use silicone molds for fun shapes.
