Ingredients

Main Ingredients
  • 5 large sweet potatoes peeled and quartered
  • 2 cups miniature marshmallows
  • ½ cup raw pecans chopped
  • ½ cup light brown sugar packed
  • ½ cup (1 stick) butter at room temperature, plus more for greasing
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon

Equipment

  • Oven
  • 9x13-inch Baking Pan
  • Large pot
  • Large bowl
  • Aluminum Foil
  • potato masher

Method

Preparation
  1. Preheat your oven to 350 degrees Fahrenheit and butter a 9x13 inch baking pan.
  2. Wash, peel, and quarter the sweet potatoes, then place them in a large pot and cover with cold water. Bring to a boil over high heat, then reduce to a low boil for 20 minutes until fork-tender; drain the potatoes and transfer to a large bowl.
  3. Add the brown sugar, vanilla extract, salt, ground cinnamon, and room-temperature butter to the drained sweet potatoes. Mash all ingredients together until well combined.
  4. Transfer the mashed sweet potatoes to the prepared baking pan, smoothing the top evenly, and then sprinkle the chopped raw pecans over the sweet potatoes.
  5. Cover the casserole with miniature marshmallows, then cover the pan with aluminum foil and bake for 20 minutes.
  6. Remove the aluminum foil and continue baking for five more minutes, until the marshmallows are golden brown. Optionally, if the marshmallows need more browning, you can broil for up to two additional minutes.
  7. Let the sweet potato casserole cool for 15 minutes before serving for optimal enjoyment.

Notes

For best results, allow the casserole to cool for 15 minutes before serving. If marshmallows are not sufficiently golden after baking, use the broiler for a couple of minutes, keeping a close eye on them to prevent burning.
