Ingredients

For the Flax Egg
  • 2 tablespoons ground flaxseed meal
  • 5 tablespoons water
Dry Ingredients
  • 1.75 cups super fine almond flour
  • 0.33 cup monk fruit and erythritol sweetener blend or other 1:1 sugar substitute
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon sea salt
  • 0.5 cup chopped walnuts or pecans optional, adds texture and healthy fats
Wet Ingredients
  • 1 cup grated zucchini squeezed very dry and lightly packed
  • 0.33 cup unsweetened almond milk room temperature
  • 0.33 cup avocado oil or unsweetened applesauce for oil-free version
  • 1 teaspoon pure vanilla extract

Method

  1. Preheat oven to 350°F (176°C) and line an 8x4 inch loaf pan with parchment paper, leaving overhang for easy removal.
  2. In a small bowl, whisk ground flaxseed meal and water to make a flax egg. Let sit 5–10 minutes until gel-like.
  3. Grate zucchini and squeeze out excess moisture using a clean towel or nut milk bag.
  4. In a large mixing bowl, whisk flax egg, avocado oil (or applesauce), almond milk, and vanilla extract until smooth. Stir in zucchini.
  5. Add almond flour, sweetener, cinnamon, baking powder, baking soda, salt, and nuts (if using). Fold gently until just combined.
  6. Spread batter evenly into prepared loaf pan. Bake 55–65 minutes, until golden brown and a toothpick comes out clean or with a few crumbs.
  7. Cool in pan 15–20 minutes, then lift out using parchment. Cool completely on a wire rack before slicing.

Notes

For best texture, thoroughly squeeze zucchini before adding to batter. Use the spoon-and-level method for almond flour to avoid dryness. Allow bread to cool fully before slicing for clean cuts. Nuts add protein and healthy fats that can further support stable blood sugar.
