Ingredients

Base Ingredients
  • 3 large ripe bananas 344g without peels
  • 3/4 cup coconut flour high-fiber, low-carb
  • 5 large eggs can substitute flax eggs for vegan
Sweetener and Flavor
  • 1/3 cup coconut sugar or monk fruit for diabetic-friendly option
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
Leavening and Balance
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp fine sea salt

Method

  1. Preheat oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper for easy removal.
  2. Mash the ripe bananas in a large mixing bowl with a fork until smooth and lump-free.
  3. Add coconut flour, coconut sugar or chosen sweetener, cinnamon, baking soda, baking powder, and salt. Stir lightly to combine.
  4. Add eggs and vanilla extract. Mix with a whisk or electric hand mixer until smooth and evenly blended.
  5. Pour the batter into the prepared loaf pan, spreading evenly.
  6. Bake for 45–55 minutes, until the center is firm, a toothpick comes out clean, and the top has small cracks.
  7. Cool completely on a wire rack before slicing to prevent a gummy texture.
  8. Store in an airtight container in the refrigerator for up to one week.

Notes

For a vegan version, replace eggs with flax or chia eggs. Optional mix-ins include sugar-free chocolate chips, chopped walnuts, or shredded coconut. To freeze, wrap slices in parchment paper and store in a freezer-safe bag for up to 3 months.
