Ingredients
Method
- Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
- If making your own oat flour, blend 3 cups of gluten-free rolled oats in a high-speed blender until fine. Measure out 2 3/4 cups.
- In a large mixing bowl, whisk together almond milk, flax eggs, and monk fruit sweetener until smooth.
- Add the oat flour to the bowl and whisk to combine.
- Mix in sea salt, baking powder, and psyllium husk (if using), stirring gently.
- Pour batter into the prepared loaf pan, spreading evenly.
- Bake for 45 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
- Cool completely in the pan. For best texture, let cool overnight before slicing.
Notes
For a crunchy texture, add chopped walnuts, pumpkin seeds, or sunflower seeds. For flavor, try cinnamon or rosemary. Always allow bread to cool before slicing to prevent crumbling. Store in an airtight container for up to 4 days at room temperature, 1 week in the fridge, or freeze in slices for up to 3 months.
