Ingredients

Pancake Batter
  • 4 eggs
  • 1.5 cups cottage cheese
  • 3 tablespoons pure maple syrup plus more for serving
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free all purpose flour or regular flour
  • 0.5 tablespoon baking powder
  • desired mix-in's like blueberries, chocolate chips, anything!

Equipment

  • Large bowl
  • Skillet

Method

Preparation
  1. Whisk eggs, cottage cheese, maple syrup, and vanilla in a large bowl until well combined.
  2. Stir in the flour and baking powder until the mixture is uniform.
  3. Gently fold in any desired mix-ins, such as blueberries or chocolate chips.
Cooking
  1. Heat a buttered or oiled skillet, then scoop 1/4 cup of batter per pancake, leaving space between each.
  2. Cook pancakes for 3-5 minutes on each side over medium-low heat until golden brown.
  3. Remove pancakes from the skillet and serve immediately with extra maple syrup and your preferred toppings.

Notes

I don't recommend flax eggs here. The batter can also be blended. Enjoy with maple syrup and desired toppings!
