Thai Green Tea Jelly Ingredients
  • 240 ml strongly brewed Thai green tea
  • 7.5 g gelatin powder soaked in 3 tbsp cold water
  • 30 g caster sugar
Topping Ingredients
  • 50 ml condensed milk
  • 70 ml evaporated milk

Equipment

  • Rectangular container
  • Whisk
  • Serving glasses

Method

Original Thai Tea Jelly
  1. Dissolve soaked gelatin and sugar in the hot Thai tea. Pour into a rectangular container, allow it to cool, and then refrigerate for at least four hours to set.
Green Tea Jelly
  1. Prepare the green tea jelly by following the same dissolution, pouring, and setting steps as the original Thai tea jelly.
Serve
  1. Lightly whisk the condensed and evaporated milks together. Once the jellies are set, unmould, cut them into cubes, divide into serving glasses, and drizzle with the prepared milk mixture.

Notes

For best results, ensure the gelatin is fully dissolved. Using clean takeaway boxes for setting the jelly is a good way to recycle.
