Ingredients

  • 3 envelopes (approx. 21g) unflavored gelati
  • 2 cups boiling water
  • 1 cup fresh orange juice
  • 1/2 cup fresh grapefruit juice
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • 2-3 tablespoons erythritol or monk fruit sweetener
  • 1 large orange, peeled and segmented
  • 1/2 large grapefruit, peeled and segmented
  • Optional: Fresh mint leaves for garnish

Method

  1. In a medium saucepan, bring 2 cups of water to a rolling boil. Remove from heat immediately.
  2. Gradually sprinkle the 3 envelopes of unflavored gelatin over the hot water, whisking constantly until completely dissolved.
  3. Add in the fresh orange, grapefruit, lemon, and lime juices, along with your chosen sweetener. Whisk until fully incorporated.
  4. Allow the mixture to cool at room temperature for about 10-15 minutes.
  5. While cooling, peel and segment your large orange and half grapefruit, removing all white pith.
  6. Gently fold the segmented citrus fruits into the slightly cooled gelatin mixture. Pour into an 8x8 inch dish or gelatin mold.
  7. Refrigerate the dish for at least 4-6 hours or preferably overnight until set.
  8. Cut into squares or unmold onto a plate. Garnish with fresh mint leaves before serving.
