Method
- Season the chicken breasts on both sides with salt, black pepper, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5 to 6 minutes per side, until golden brown and cooked through. Transfer the chicken to a plate.
- Reduce the heat to medium and add the butter to the same skillet. Stir in the mushrooms and onion and cook for 5 to 7 minutes, until the mushrooms are browned and the onion is softened.
- Add the minced garlic and cook for 30 seconds, stirring constantly.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2 to 3 minutes.
- Stir in the heavy cream, Parmesan cheese, and thyme. Simmer gently for 3 to 4 minutes, until the sauce thickens slightly.
- Return the chicken to the skillet and spoon the sauce over the top. Cook for 2 to 3 minutes more, until the chicken is heated through.
- Garnish with chopped parsley and serve warm.
Notes
For best results, use an instant-read thermometer to confirm the chicken reaches 165°F. You can substitute half-and-half for a lighter sauce, though it will be less rich. Serve with pasta, rice, or mashed potatoes to soak up the sauce.
