- Heat olive oil in a large pot over medium heat. Add ground beef, breaking it apart with a spoon. Cook until browned, then drain excess fat.
- Stir in chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
- Pour in crushed tomatoes, tomato sauce, tomato paste, and red wine if using. Add parsley, basil, oregano, sugar, salt, and pepper. Bring to a simmer, then reduce heat to low, cover and cook for at least 1 hour.
- In a medium bowl, combine ricotta cheese, egg, 1/2 cup Parmesan cheese, 1/4 cup fresh parsley, salt, and pepper. Mix well and set aside.
- Melt butter in a medium saucepan over medium heat. Whisk in flour to create a roux. Gradually whisk in warm milk, stirring constantly until thickened, about 5-7 minutes.
- Remove from heat and stir in nutmeg, salt, and white pepper.
- Preheat oven to 375°F (190°C). Spread a thin layer of meat sauce at the bottom of a 9x13 inch baking dish. Place a layer of lasagna noodles over the sauce.
- Spread half of the ricotta mixture over the noodles. Top with meat sauce, followed by mozzarella and provolone. Pour one-third of the béchamel sauce over the cheese layer.
- Repeat layers: noodles, remaining ricotta, meat sauce, mozzarella/provolone, béchamel.
- For the final layer: noodles, remaining meat sauce, rest of béchamel. Top with additional mozzarella and Parmesan cheese.
- Cover loosely with foil and bake for 25 minutes. Remove foil and bake for another 20-25 minutes until golden brown.
- Let the lasagna rest for at least 15-20 minutes before slicing and serving.
Notes
For best results, simmer the meat sauce for 1-2 hours. Use warm milk in the béchamel to avoid lumps. Don’t skip the resting period after baking to ensure clean slices.
