- Pat the chicken breasts dry, then season both sides with salt, black pepper, and garlic powder.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5 to 6 minutes per side, until golden brown and cooked through. Transfer the chicken to a plate.
- Reduce the heat to medium and add the butter to the same skillet. Once melted, add the minced garlic and cook for about 30 seconds, stirring constantly, until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Stir in the heavy cream, Parmesan cheese, and Italian seasoning.
- Bring the sauce to a gentle simmer. Add the cornstarch slurry and cook for 1 to 2 minutes, stirring, until the sauce thickens.
- Return the chicken to the skillet and spoon the sauce over the top. Simmer for 2 to 3 minutes so the chicken is heated through and coated in the sauce.
- Garnish with chopped parsley and serve warm.
Notes
For a lighter version, you can use half-and-half instead of heavy cream, though the sauce will be less rich. Serve with pasta, rice, mashed potatoes, or steamed vegetables to soak up the sauce.
