Ingredients

  • 1 (8-ounce) package full-fat cream cheese, softened
  • 1/2 cup dried cranberries, unsweetened or low-sugar
  • 1/4 cup chopped walnuts or pecans, lightly toasted
  • 2 tablespoons pure maple syrup or erythritol for a lower sugar optio
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon (optional)
  • 2 sheets (10-ounce package) puff pastry, thawed
  • 1 large egg, whisked (for egg wash)
  • 1 tablespoon water (for egg wash)
  • A pinch of sea salt

Method

  1. In a large mixing bowl, combine the softened cream cheese, dried cranberries, chopped walnuts, maple syrup (or erythritol), vanilla extract, and optional cinnamon. Beat with an electric mixer until smooth.
  2. Lightly flour a clean surface. Unroll one sheet of puff pastry and roll it into a rectangle about 10x12 inches.
  3. Spread half of the cranberry cream cheese mixture over the pastry, leaving a small border.
  4. Roll the pastry tightly from the long edge opposite the border to form a log. Repeat with the second sheet of puff pastry and remaining filling.
  5. Wrap each log in plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat oven to 400°F (200°C) and line baking sheets with parchment paper.
  7. Slice each log into 1/2-inch thick rounds and arrange on prepared baking sheets.
  8. Whisk together egg and water for the egg wash and brush over the pinwheels.
  9. Bake for 15-20 minutes until golden brown.

Notes

Ensure your cream cheese is softened for easy mixing. Roll the pastry tightly and chill for clean slices. Store baked pinwheels in an airtight container for up to 5 days.
