  • 4 large boneless, skinless chicken breasts (about 6-8 oz each)
  • 8 ounces brie cheese, rind removed and cut into small pieces
  • 1/2 cup fresh cranberries, roughly chopped
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, freshly ground, or to taste
  • 2 tablespoons olive oil, for searing
  • 1/2 cup low sodium chicken broth
  • Optional garnish: fresh parsley or extra cranberries

Method
 

  1. Prepare the chicken by butterflying each breast and pounding to an even thickness.
  2. In a small bowl, mix together brie, chopped cranberries, rosemary, and thyme.
  3. Divide the stuffing among the chicken breasts, fold them over, and secure with toothpicks.
  4. Season the chicken with a blend of garlic powder, onion powder, smoked paprika, salt, and pepper.
  5. Sear the chicken in a hot skillet with olive oil until golden brown on both sides.
  6. Add chicken broth, then transfer the skillet to a preheated oven and bake until the chicken is cooked through.
  7. Let the chicken rest for 5 minutes before serving, garnished with parsley or cranberries if desired.

Notes

Ensure even thickness when pounding the chicken for uniform cooking. Don't overstuff the chicken to prevent leaking. Use a meat thermometer for safe cooking temperature.
