Ingredients
  

  • Whole Heads of Garlic
  • Olive Oil
  • Yellow Onio
  • Leeks
  • Low-Sodium Chicken Broth or Vegetable Broth
  • Fresh Thyme
  • Bay Leaf
  • Dry White Wine (Optional)
  • Whole-Grain Bread
  • Skim Milk or Unsweetened Almond Milk
  • Fresh Parsley
  • Salt
  • Freshly Ground Black Pepper

Method
 

  1. Preheat the oven to 400°F (200°C). Slice off the top of the garlic heads and roast for 35-45 minutes until soft.
  2. Sauté chopped onion and sliced leeks in olive oil over medium heat until soft.
  3. If using, deglaze with white wine, scraping the bottom of the pot for flavor.
  4. Add the roasted garlic pulp to the pot, then pour in the broth and add thyme and bay leaf. Simmer for 20-25 minutes.
  5. Remove thyme and bay leaf, then puree the soup to desired consistency.
  6. Stir in skim milk or almond milk and season with salt and pepper.
  7. Serve hot, garnished with parsley and optional croutons.

Notes

The soup can be stored in the fridge for up to 3-4 days or frozen for 2-3 months. Remember to let it cool before storing.
