Ingredients
  

  • 1 ½ cups whole wheat pastry flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 1 cup granulated erythritol or stevia blend
  • ½ cup unsweetened applesauce
  • ½ cup unsweetened almond milk
  • ¼ cup extra virgin olive oil
  • 2 large eggs or flax eggs
  • 1 teaspoon pure vanilla extract
  • ½ cup strong brewed coffee
  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons granulated erythritol or stevia blend
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon cornstarch or arrowroot powder
  • 4 ounces sugar-free dark chocolate
  • ½ cup unsweetened almond milk or coconut cream
  • 1 tablespoon granulated erythritol or stevia blend (optional)
  • ½ cup fresh strawberries for garnish

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour your heart-shaped baking pan.
  2. In a large mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, combine the erythritol, applesauce, almond milk, olive oil, eggs, and vanilla extract. Whisk until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Gently stir in the cooled brewed coffee.
  6. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  7. Let the cake cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
  8. Prepare the strawberry filling by simmering sliced strawberries, erythritol, and lemon juice in a saucepan.
  9. Thicken the filling with a cornstarch slurry, stirring until it thickens, then cool completely.
  10. Make the ganache by melting chopped chocolate and almond milk in a bowl until smooth. Stir in erythritol if desired.
  11. Slice the cake horizontally if necessary, and fill with strawberry mixture, then stack the layers.
  12. Frost the top and sides of the cake with ganache.
  13. Decorate with fresh strawberries and serve chilled.
