Ingredients

  • 3 ripe bananas
  • 1 1/2 cups whole wheat flour
  • 1/2 cup whey protein isolate
  • 1/2 cup dark chocolate chips
  • 2 large eggs
  • 1/3 cup maple syrup or honey
  • 1/2 cup Greek yogurt
  • 1/4 cup coconut oil (melted)
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt

Method

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9x5-inch loaf pan.
  2. Mash the ripe bananas in a large bowl until mostly smooth.
  3. Add melted coconut oil, maple syrup, Greek yogurt, eggs, and vanilla extract to the bananas and whisk together.
  4. In a separate bowl, whisk together whole wheat flour, whey protein, baking soda, and salt until combined.
  5. Fold the dry ingredients into the wet ingredients gently until just combined.
  6. Fold in the dark chocolate chips and pour the batter into the prepared loaf pan.
  7. Bake for 55-65 minutes or until a skewer inserted comes out clean.
  8. Allow to cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.

Notes

For optimal flavor, use overripe bananas for increased sweetness and moisture. Adjust sweetener based on banana ripeness.
