Ingredients
Method
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
- If your chicken is not already cooked, cube or shred 1.5 lbs of raw chicken breast, season with salt and pepper, and quickly sauté in 1 tsp olive oil until cooked through.
- In a large skillet over medium heat, melt the butter and add minced garlic, cooking for 30 seconds until fragrant.
- Whisk in the whole wheat flour and cook for 1 minute to create a roux.
- Gradually whisk in the almond milk until smooth, then stir in the Greek yogurt, Dijon mustard, onion powder, white pepper, and a pinch of salt. Cook until creamy.
- Spread half of the cooked chicken in the baking dish, layer half of the ham, half of the sauce, and half of the cheeses. Repeat the layers.
- Combine breadcrumbs with melted butter and the remaining Parmesan, then sprinkle over the casserole.
- Bake for 25-30 minutes until bubbling and golden brown.
- Let rest for 5-10 minutes before serving, garnished with parsley if desired.
