Ingredients
  

  • 2 pounds small to medium Yukon Gold or red potatoes
  • 3 tablespoons extra virgin olive oil
  • 5-6 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon sea salt (or to taste)
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Wash and chop the potatoes into roughly 1-inch pieces.
  3. Par-boil the chopped potatoes for 5-7 minutes until they are just fork-tender, then drain and dry thoroughly.
  4. Transfer the dried potatoes to a large mixing bowl, drizzle with olive oil, then add garlic, oregano, thyme, smoked paprika, salt, and black pepper. Toss gently until the potatoes are evenly coated.
  5. Spread the seasoned potatoes in a single layer on the prepared baking sheet.
  6. Roast for 30-40 minutes, flipping halfway through, until golden brown and crispy.
  7. Garnish with fresh chopped parsley and serve immediately.

Notes

Do not skip the par-boiling step! Ensure potatoes are dry before adding seasonings for crispy results. Don't overcrowd the pan for optimal roasting.
