Ingredients
  

Crust
  • 1 1/2 cups (140g) graham cracker crumbs
  • 1/2 cup (64 g) ground pistachio *
  • 1/4 cup (47 g) granulated sugar
  • 2 1/2 tbsp (14 g) unsweetened cocoa powder
  • 1/4 tsp salt
  • 6 tbsp (85 g) unsalted butter melted
Cheesecake Filling
  • 16 oz cream cheese 2 packages, room temperature
  • 1/4 cup (47 g) sour cream
  • 1/4 cup (56 g) mascarpone cheese
  • 3/4 cup (150 g) granulated sugar
  • 1 1/2 tsp vanilla paste or extract
  • 1 egg room temperature (for eggless, mix 1 tbsp cornstarch with 1 1/2 tbsp milk)
  • 1/2 tsp salt
Topping
  • 2 cups cherries pitted and halved

Equipment

  • 9-inch tart pan or cake pan
  • Hand mixer or stand mixer with paddle attachment

Method
 

Crust
  1. Whisk graham cracker crumbs, ground pistachio, sugar, cocoa powder, and salt in a bowl. Add melted butter and mix until it resembles wet sand.
  2. Press the crust mixture evenly into a 9-inch tart or cake pan and set aside.
Cheesecake Filling
  1. Preheat your oven to 325°F (162°C).
  2. Beat cream cheese until smooth, then add sour cream, mascarpone, and sugar, mixing for one minute. Finally, incorporate the egg, vanilla, and salt until just combined.
  3. Pour the cheesecake filling into the prepared crust and spread it into an even layer using a spoon or spatula.
Baking & Serving
  1. Bake for 30-40 minutes until set with a slight jiggle in the center. Cool completely, then refrigerate for 2-3 hours before decorating with cherry halves and serving.

Notes

Ensure cream cheese, egg, sour cream, and mascarpone are at room temperature for a smooth filling. The cheesecake requires significant cooling and chilling time, at least 2-3 hours in the refrigerator, before serving.
