Ingredients

Wrap Base
  • 1 cup cottage cheese full-fat for best texture
  • 2 large eggs room temperature
Seasoning
  • garlic powder to taste
  • Italian seasoning or your favorite herb mix
  • salt and pepper optional, to taste

Method

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper, ensuring it lays flat.
  2. Blend cottage cheese and eggs in a blender or food processor until completely smooth.
  3. Spray the parchment paper lightly with cooking oil to prevent sticking.
  4. Pour the mixture onto the baking sheet and spread it into a thin, even rectangle about 1/8-inch thick using a spoon.
  5. Bake for 30 to 35 minutes, until edges are golden and center is set.
  6. Let it cool completely on the baking sheet to avoid tearing.
  7. Carefully remove the wrap from the parchment paper and place on a cutting board.
  8. Add your desired fillings, roll it up, and slice to serve.

Notes

Use full-fat cottage cheese for best flexibility and texture. Adjust seasoning as desired. Let wraps cool before peeling for best results. Store in fridge with parchment between layers for up to 5 days or freeze for up to 2 months.
