  • 3 large fresh apples (Honeycrisp, Fuji, or Gala)
  • 1 cup granulated sugar
  • 2 cups water
  • 1 tablespoon fresh lemon juice
  • 4 packets unflavored gelatin powder
  • 1 small cinnamon stick (optional)
  • A few drops red food coloring (optional)
  • Pinch of salt

Method
 

  1. Prepare the Apples: Wash, peel, core, and dice the apples into ½ inch cubes.
  2. Simmer the Candied Apples: In a saucepan, combine diced apples, 1 cup sugar, 1 cup water, lemon juice, and salt. Simmer for 8-10 minutes until apples are tender.
  3. Bloom the Gelatin: In a heatproof bowl, sprinkle 4 packets of gelatin over 1 cup cold water. Let sit for 5-7 minutes.
  4. Dissolve the Gelatin: Add the hot apple mixture to the bloomed gelatin and whisk until dissolved. Add food coloring if using.
  5. Assemble and Chill: Pour the mixture into a baking dish or mold, evenly distributing the apple pieces.
  6. Refrigerate: Chill for at least 4-6 hours, preferably overnight, until set.
  7. Serve: Cut into squares or shapes and serve chilled.

Notes

Uniform apple dicing ensures even cooking. Gentle stirring after adding gelatin is crucial to avoid boiling. Test sweetness before chilling and allow adequate time for firm setting.
