Ingredients

  • 2 tablespoons olive oil or avocado oil
  • 1.5 pounds boneless, skinless chicken breast or thighs, cut into 1-inch cubes
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil or avocado oil
  • 1 large yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can fire-roasted diced tomatoes, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained (or 1.5 cups frozen corn)
  • 4 cups low-sodium chicken broth
  • ½ cup authentic buffalo sauce (adjust to your spice preference)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground cumi
  • ½ teaspoon dried oregano
  • ½ cup Greek yogurt or light sour cream (for creamy swirls)
  • ½ cup shredded cheddar or Monterey Jack cheese
  • ¼ cup fresh cilantro, chopped
  • Crushed tortilla chips or baked tortilla strips
  • Diced avocado

Method

  1. Pat the chicken cubes dry. In a bowl, toss the chicken with 1 tablespoon olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
  2. Heat 1 tablespoon olive oil in your Dutch oven over medium-high heat. Add the seasoned chicken in a single layer, searing for 3-4 minutes per side until golden brown and cooked through. Remove the chicken from the pot and set aside.
  3. Reduce heat to medium. Add the remaining 1 tablespoon olive oil to the pot. Add the diced onion and cook, stirring occasionally, until softened and translucent, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  4. Pour in the fire-roasted diced tomatoes, black beans, corn, chicken broth, buffalo sauce, apple cider vinegar, ground cumin, and dried oregano. Stir well to combine, scraping up any browned bits from the bottom of the pot.
  5. Bring the soup to a gentle simmer. Reduce heat to low, cover, and let it cook for at least 15-20 minutes.
  6. Add the cooked chicken back into the pot and stir to incorporate. Continue to simmer for another 5 minutes to ensure the chicken is heated through.
  7. Ladle the hot Buffalo Chicken Tortilla Soup into bowls. Swirl in a dollop of Greek yogurt or sour cream, sprinkle with shredded cheese, fresh cilantro, and a generous handful of crushed tortilla chips or strips. A slice of avocado adds a wonderful richness.
