Ingredients
  

  • 2 cups cooked chicken breast, shredded
  • 12 whole wheat slider buns
  • ½ cup buffalo sauce
  • ¼ cup plain, non-fat Greek yogurt
  • 2 tablespoons light blue cheese crumbles (optional)
  • ¼ cup finely diced red onio
  • ¼ cup finely diced celery
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • Olive oil spray
  • Optional garnishes: fresh cilantro, parsley, or extra celery sticks

Method
 

  1. Shred 2 cups of cooked chicken breast.
  2. Whisk buffalo sauce, Greek yogurt, garlic powder, onion powder, and black pepper in a bowl until smooth.
  3. Add shredded chicken, diced red onion, celery, and optional blue cheese crumbles to the sauce.
  4. Thoroughly coat chicken and vegetables with the sauce.
  5. Lightly toast whole wheat slider buns if desired.
  6. Spoon a generous portion of buffalo chicken mixture onto each bun's bottom half, then top.
  7. Serve immediately, garnished as desired.

Notes

Use store-bought rotisserie chicken for quick prep. Let the mixture sit for 15-20 minutes to deepen flavors. Lightly toast buns to prevent sogginess. The mixture can be prepared ahead and stored in the refrigerator for up to 3 days.
