Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 1 large yellow onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • ½ cup Frank's RedHot Buffalo Wing Sauce
  • 2 tablespoons white vinegar
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 8 ounces whole wheat egg noodles or chickpea pasta
  • ½ cup Greek yogurt or light sour cream (optional)
  • ¼ cup fresh chopped cilantro or parsley
  • Blue cheese crumbles (optional)
  • Sliced green onions (for garnish)

Method

  1. Heat olive oil in a large Dutch oven or stockpot over medium-high heat. Season cubed chicken with salt and pepper. Add chicken to the pot and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Remove chicken from the pot and set aside.
  2. Add onion, carrots, and celery to the same pot, adding more oil if needed. Sauté for 5-7 minutes until softened. Stir in minced garlic, smoked paprika, onion powder, and garlic powder, cooking for another minute until fragrant.
  3. Pour in chicken broth, buffalo sauce, and white vinegar. Bring to a boil, then reduce heat to a simmer for at least 15 minutes.
  4. Stir in the whole wheat egg noodles or chickpea pasta. Cook according to package directions until al dente.
  5. Return the cooked chicken to the pot. If using, stir in Greek yogurt or light sour cream until fully incorporated.
  6. Ladle the soup into bowls and garnish with fresh cilantro or parsley, sliced green onions, and optional blue cheese crumbles.

Notes

Refrigerate leftovers in airtight containers for up to 3-4 days. For meal prep, consider cooking noodles separately to prevent mushiness.
