Ingredients

  • 2 medium heads of fresh cauliflower, cored and cut into florets
  • 2 tablespoons extra virgin olive oil
  • 1 large yellow onion, chopped
  • 4-6 cloves garlic, minced
  • 6 cups low sodium vegetable broth
  • 8 ounces cream cheese, softened
  • ½ cup Frank's RedHot Original hot sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ cup nutritional yeast (optional)
  • Salt and black pepper to taste
  • Optional protein boost: 1 cup cooked shredded chicken breast or ½ cup hemp hearts
  • Garnish: Fresh chives, crumbled blue cheese or ranch dressing

Method

  1. Preheat your oven to 400°F (200°C). Toss the cauliflower florets with 1 tablespoon of olive oil, salt, and pepper on a large baking sheet. Roast for 20-25 minutes until tender and lightly golden.
  2. In a large pot or Dutch oven, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes. Stir in the minced garlic, smoked paprika, garlic powder, and onion powder, cooking for another minute.
  3. Add the roasted cauliflower and vegetable broth to the pot. Bring to a simmer, then reduce heat and cook for 10-15 minutes.
  4. Transfer the soup mixture to a high-speed blender. Add the softened cream cheese, hot sauce, apple cider vinegar, and nutritional yeast (if using). Blend until smooth.
  5. Return the blended soup to the pot over low heat. Stir in your optional protein boost. Taste and adjust seasonings as needed.
  6. Ladle the soup into bowls and garnish as desired. Serve immediately.

Notes

Ensure cream cheese is softened for smooth blending. Cool completely before storing. Great for meal prep and freezes well.
