Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 large egg
  • ½ cup milk (any kind)
  • ¼ cup unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1 teaspoon lemon zest (optional)

Method
 

  1. Preheat your oven to 350°F (175°C). Lightly grease your donut pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk the egg, milk, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently with a rubber spatula until just combined.
  5. Gently fold in the fresh or frozen blueberries.
  6. Spoon the batter into the prepared donut pan cavities, filling each about two-thirds full.
  7. Bake for 12-15 minutes, or until golden brown and a toothpick comes out clean.
  8. Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
