Ingredients

  • 2 cups mixed fresh berries (strawberries, raspberries, blueberries, blackberries)
  • 1-2 tablespoons granulated sugar or honey (optional)
  • 1 tablespoon fresh lemon juice
  • 1 bottle (750ml) chilled Prosecco or other dry sparkling wine
  • Fresh berry sprigs or mint leaves for garnish

Method

  1. Wash all your fresh berries thoroughly. If using strawberries, hull and halve them.
  2. Combine the mixed berries, optional sugar or honey, and fresh lemon juice in your blender or food processor.
  3. Process the berry mixture until it reaches a completely smooth consistency.
  4. Press the berry purée through a fine-mesh sieve into a clean bowl to ensure silkiness.
  5. Cover the bowl of berry purée and refrigerate it for at least 30 minutes.
  6. Pour about 2-3 tablespoons of the chilled berry purée into each champagne flute.
  7. Slowly pour the chilled Prosecco or sparkling wine over the berry purée until the glass is almost full.
  8. Garnish each Berry Bellini with a fresh berry sprig or a mint leaf and serve immediately.

Notes

Berry purée can be made ahead and stored in the refrigerator for up to 2-3 days. Serve fresh for the best experience.
