Ingredients
Method
- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- In a large mixing bowl, thoroughly mash the ripe bananas until mostly smooth.
- Add the room temperature eggs, maple syrup (or honey), melted coconut oil (or ghee), and vanilla extract to the mashed bananas and whisk until well combined.
- In a separate bowl, whisk together the almond flour, cocoa powder, baking soda, and salt.
- Gradually fold the dry ingredients into the wet ingredients until just combined.
- Fold in the chocolate chips if using, reserving some for topping.
- Pour the batter into the prepared baking pan and smooth the top, then sprinkle any reserved chocolate chips over the top.
- Bake for 25-30 minutes or until a toothpick inserted comes out with moist crumbs.
- Let cool completely in the pan before slicing into squares.
Notes
Use very ripe bananas for the best flavor and sweetness. Avoid overmixing the batter to ensure fudginess. Store leftovers in an airtight container.
