Ingredients
Method
- Place a large heavy-bottomed pot over medium-high heat and melt the coconut oil.
- Test the kernels by dropping 2-3 into the oil; cover and wait for them to pop.
- Once test kernels pop, add the remaining 1/2 cup of popcorn kernels and gently shake the pot to coat them in oil.
- Return the pot to heat, cover with the lid slightly ajar, and shake gently every few seconds until the popping slows.
- Remove from heat when popping slows, and pour the popcorn into a large mixing bowl.
- In a separate bowl, whisk together blue spirulina, powdered sugar, and sea salt. If using, melt butter and whisk in vanilla.
- Drizzle melted butter over the warm popcorn, toss gently, then sprinkle the blue sugar mixture in batches, tossing until coated.
- Transfer to a serving bowl and enjoy.
Notes
Store cooled popcorn in an airtight container. Best enjoyed within 1-2 days for freshness.
