Ingredients

Cake Ingredients
  • 180 g Brown Sugar
  • 125 g Butter
  • 50 g Shredded Coconut
  • 3 Eggs
  • 195 g Flour
  • Butter For greasing
  • Salt a pinch
  • 300 ml Milk hot
  • Shredded Coconut To sprinkle

Equipment

  • Oven
  • Square Baking Mold
  • Whisk
  • Mixing bowls
  • Toothpick
  • Saucepan

Method

Instructions
  1. Preheat the oven to 180 °C and prepare a square baking mold by greasing with butter and lining with non-stick paper.
  2. Whisk together the butter and brown sugar until creamy, then separate egg yolks and add them to the sugar mixture.
  3. In a separate bowl, whisk the egg whites until stiff peaks form and set aside.
  4. Add the flour, 50g shredded coconut, and a pinch of salt to the yolk mixture, mixing well until creamy; then gently fold in the whisked egg whites until just combined.
  5. Pour the batter into the prepared mold, smooth it out, and bake for about 30 minutes until golden and a toothpick comes out dry. Keep the cake in the mold after baking.
  6. Heat the milk until it is very hot, then pour it evenly over the hot cake while it is still in the mold for better absorption.
  7. Finally, generously sprinkle with additional shredded coconut and let the cake cool completely before removing it from the tray and serving.

Notes

Ensure the milk is very hot when pouring over the baked cake to allow for maximum absorption, resulting in a wonderfully moist texture. Avoid overmixing the batter after adding the egg whites to maintain the cake's light and airy structure.
