Ingredients

  • 1 pound pasta (linguine, spaghetti, or rotini)
  • 1 bunch fresh asparagus (about 1 pound), trimmed and cut into 1-inch pieces
  • 1/4 cup extra virgin olive oil
  • 4-5 cloves fresh garlic, minced
  • 1 large lemon, zested and juiced
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup low-sodium vegetable broth (or pasta water)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Method

  1. Cook the pasta according to package directions in a large pot of salted boiling water until al dente, reserving 1 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add asparagus and sauté for 3-5 minutes until tender-crisp.
  3. Add minced garlic to the skillet and cook for another 1-2 minutes until fragrant.
  4. Pour in the vegetable broth (or reserved pasta water), lemon zest, and half of the lemon juice. Bring to a gentle simmer.
  5. Add cooked pasta to the skillet and toss to coat, adding reserved pasta water as needed for desired consistency.
  6. Stir in grated Parmesan cheese and remaining lemon juice. Season with salt and pepper to taste.
  7. Garnish with fresh parsley and extra Parmesan cheese. Serve immediately.

Notes

To customize this recipe, you can add greens like spinach, substitute protein options, or use gluten-free pasta. For creaminess, add more reserved pasta water or unsalted butter.
