Ingredients
  

  • 1.5 lbs Pork Loin or Tenderloin, trimmed and cut
  • 1 cup Apple Butter, preferably low-sugar
  • 2 tablespoons Dijon Mustard
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1/2 teaspoon Smoked Paprika (optional)
  • 1/2 teaspoon Salt, or to taste
  • 1/4 teaspoon Black Pepper
  • 1 tablespoon Olive Oil
  • 2 tablespoons Fresh Parsley or Thyme, chopped (optional)

Method
 

  1. Pat the pork loin medallions dry and season with salt, black pepper, garlic powder, onion powder, and smoked paprika.
  2. Heat olive oil in a skillet over medium-high heat, then sear the pork for 3-4 minutes per side until golden brown.
  3. Remove the pork and deglaze the pan if necessary.
  4. In the same pan, whisk together apple butter, Dijon, and vinegar, and let simmer for 2-3 minutes.
  5. Return the seared pork to the pan and coat with the sauce.
  6. Cover and simmer on low for 10-15 minutes until the pork reaches 145°F.
  7. Let rest for 5 minutes before serving, garnished with fresh herbs if desired.

Notes

Prep time may vary based on your cooking speed. Ensure the pork is cooked to a safe internal temperature of 145°F. Optional vegetables can be added for a complete meal.
